Easy as 1, 2, 3 Toast…Definitely my favorite go-to breakfast. Fast, easy and oh so scrumptious.
This is a quick and healthy breakfast, full of healthy whole grains and good fats that will start your day off right!
You cannot have easy as 1, 2, 3 toast without some ripe avocados! I LOVE avocados, they are a huge staple in our household! Not to mention, they offer over nearly 20 vitamins and minerals, such as potassium and folate (folate is so crucial for us mamas during pregnancy to prevent neural tube defects in our lil munchkins).
The perfect easy as 1,2,3 breakfast for you to enjoy!
- 12 grain bread
- 1 avocado sliced
- 6 cherry tomatoes diced
- Handful of spinach
- Sprinkle of feta cheese
- Drizzle of balsamic vinegar
- Toast bread as desired. While bread is toasting slice 1 avocado and dice tomatoes.
- Once toast is toasted place spinach, sliced avocado and diced tomatoes on toast.
♥ Tip – Top with feta cheese and drizzle with balsamic vinegar.
