Trail Mix

One of the top challenges I know I face along with a lot of others out there, is making quick snacks. Instead of running to the pantry and grabbing the chips or the junk food, why not make healthy snacks of your own that are ready to grab when that sudden urge of hunger comes on.

Trail mix is one of my favorite grab and go snacks! I have created this recipe using a few of my favorite dried fruits, seeds and nuts.

The fun part about trail mix is that you can add your favorite nuts, seeds and dried fruits and mix it up each time you make it! So go ahead…give it a try!

♦ Ingredients

Sweet trail mix

  • 1 tbsp coconut oil melted
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 2 cups of raw unsalted almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup of coconut chips
  • handful of dried mango’s
  • pinch of pink sea salt

Savory trail mix

  • 1 tbsp coconut oil melted
  • 1/2 tsp dill
  • 1/2 tsp paprika
  • 2 cups of raw unsalted almonds
  • 1/2 cup pf pumpkin seeds
  • 1/2 cup of coconut chips
  • pinch of pink sea salt

♦ Directions

  1. In a large mixing bowl combine all ingredients, mix gently until almonds are evenly coated with coconut oil and spices.
  2. Pre-heat oven to 350. On a large baking sheet arrange almonds so there are none over lapping each other.
  3. Bake for 5 minutes until fragrant. Let cool and enjoy.

♥ Tip – Store almonds in airtight container to prevent any moisture in almonds. They will last longer!
